We use only free range eggs in all our dishes and in an average week our chefs cook around 1500 eggs, the most popular choice of which is poached eggs followed closely by creamy scrambled eggs and then fried. Poached eggs are the most difficult to get right with everyone having their own favourite way of serving, however practice makes perfect!
